Curry Tuna Salad

If you’ve been following my Instagram, you’d know I made curry tuna salad for lunch. While I did make it up on my own, I got the inspiration from Greatist’s article 52 Meals in 12 Minutes or Less. I am trying to make healthy and speedy lunches in an effort to eat well and get more fit, particularly because I will be heading home to Miami for Easter. I cannot wait.

Anyway, here’s the skinny on the recipe:

Ingredients:

  • 2 tbsp. Nonfat plain Greek Yogurt [ I used Fage ]
  • 1/4 tbsp curry powder [ I modified to put slightly more curry powder to really enhance the flavor ]
  • 1 can of tuna
  • 1/8 cup red onion (diced)
  • 1/4 cup grapes (halved)
  • 1 tbsp. cilanto (chopped)

Directions:

  1. Combine 2 tbsp. nonfat plain Greek yogurt and ¼ tbsp. curry powder in a small bowl.
  2. Add tuna to the bowl and mix.
  3. Add 1/8 cup red onion (diced), ¼ cup grapes (halved), and 1 tbsp. cilantro (chopped) to the bowl and stir.
  4. Serve atop a large handful mixed greens.

The Best Chickpea Salad You'll Ever Have

There is a salad I can eat again and again. It is not your average perception of a salad with lettuce and greens. Instead, its chickpea based. I’m not surprised with my love for this salad considering my obsession with all types of hummus.

Ingredients for The Best Chickpea Salad You'll Ever HaveIngredients:

  • 1 large can of garbanzo beans
  • Box of diced onions & shallots
  • 2 tomatoes
  • 1 red pepper
  • 4 tablespoons yellow mustard*
  • 2 tablespoons lemon juice*
  • 1 teaspoon honey
  • Seasoning

Directions:

  1. Drain can of garbanzo beans. Place in a large bowl.
  2. Dice tomatoes. Add to bowl.
  3. Cut full red pepper. Add to bowl.
  4. Add chopped onions to taste.
  5. *Add mustard and lemon juice. I eyeball the amount I put, but the above should suffice.
  6. Add honey.
  7. Add seasoning to taste.

Quick & Healthy Meal : Garlic Shrimp Salad

At first, I used to use this recipe for when I was in a rush and wanted something savory, but now I use my garlic shrimp recipe regularly! It is great with quinoa, roasted veggies, pasta, and many more things! Tonight, I made a colorful salad. Another perk about this recipe is it takes 5 minutes to make!

Garlic Shrimp

  • 3 garlic cloves
  • 1/4 cup olive oil
  • 1 pound medium, peeled and deveined raw shrimp
  • 2 tablespoons lemon juice
  • 1 tablespoon Badia Completo Sazon

To prepare the seasoning, peel the garlic and finely chop and place in a large saute pan with the olive oil. Cook over medium-high heat for 30 seconds. Add the shrimp, lemon juice, and Completo Sazon and cook, stirring frequently, for 3 to 4 minutes, until the shrimp turn pink and curl slightly. Place atop whatever side you like! Voila! How easy is that?
