The Oscars 2013

I’ve never really been into watching Award shows; however, in the past year I’ve been addicted. Last night did not meet my expectations. I was struggling to keep engaged. The only thing that kept me sane was the chatter on the interwebs and admiring everyone’s outfits.

My favorite outfit of the night was Halle Berry’s Versace dress; she looked absolutely stunning.

Paired with a phenomenal night of movies was a great meal. Trying to figure out what to serve during the Oscars, we stuck to a cocktail favorite: caipirinha, but tried out some new foods: Chicken with Honey Beer sauce and some Oven Roasted Seasoned Red Potatoes.

Dinner Time

Chicken with Honey Beer sauce (modified from Daydream Kitchen)


  • 2 tsp. oil
  • 4 (6 oz.) skinless, boneless chicken breast halves
  • 1/4 tsp. freshly ground black pepper
  • 1/8 tsp. salt
  • ¼ cup onions
  • 1.5 cup beer
  • 6 tbsp. lower-sodium soy sauce
  • 3 tbsp. whole-grain Dijon mustard
  • 3 tbsp. honey


  1. Heat a large skillet over medium-high heat. Add oil to pan; swirl to coat.
  2.  Sprinkle chicken evenly with pepper and salt.
  3. Add chicken to pan; sauté 6 minutes on each side or until done.
  4.  Remove chicken from pan; keep warm.
  5. Add onionss to pan; cook 1 minute or until translucent.
  6. Combine beer and next 3 ingredients (through honey) in a small bowl; stir with a whisk. Add beer mixture to pan; bring to a boil, scraping pan to loosen browned bits.
  7. Cook 8 minutes or until liquid is reduced to 1/2 cup. Return chicken to pan; turn to coat with sauce.

Oven Roasted Seasoned Red Potatoes


  • 8 cups cubed potatoes (about 3 lb of red potatoes)
  • 1/4 cup oil
  • 1 pkg. McCormick Seasoning Mix {Toasted Onion & Garlic Potato}


  1. Toss potatoes with oil in a large boil.
  2. Sprinkle with Seasoning mix. Toss again to coat well. Arrange in a single layer on foil lined baking pan.
  3. Bake in a preheated 400F over 25 minutes.
