Peanut Butter Chocolate Chip Chia Pudding

If you know me, you know I love anything combined with peanut butter and chocolate. This is why Reese’s Peanut Butter cup is my go-to snack at the movie theaters. I decided to take a spin on my  favorite sweet and incorporate it into a healthy breakfast dish: chia pudding.

Ingredients:

  • 4 T whole chia seeds
  • 3/4 cup unsweetened vanilla almond milk
  • 1/2 scoop vanilla protein powder
  • 1 T rolled oats
  • 1 T mini semi-sweet chocolate chips
  • 1 T PB2
  • 1/2 teaspoon vanilla extract
  • 1 packet Truvia
  • 1/2 sliced banana
  • Cinnamon, to taste

In a Tupperware, mix together almond milk, protein powder, and PB2. Be patient, as it may take a bit of mixing for everything to dissolve into the milk. Next, add the vanilla extract and Truvia. Then, the chia seeds. Mix. Finally, add the oats and chocolate chips. Once everything is well combined, place the container in the fridge. Let it sit overnight. In the morning, add in the banana. You can top with other fruits of your liking.

People’s first thoughts or perhaps question when it comes to chia seeds is with its relation to Chia Pets. What was once mixed with water and flourished into a animal shaped terra cotta figurine with “green hair”, is now becoming an “it” food item. Now, these seeds, which come from the desert plant salva hispanica, are mixed into drinks, sprinkled on yogurts and in cereal, as well as incorporated into baked goods.

Chia seeds have an extremely high concentration of omega-3 acids—even more than salmon.These fatty acids must be ingested from food source; your body cannot produce them itself. It has had positive correlation with reducing inflammation and may help lower risk of chronic diseases such as heart disease, cancer, and arthritis.

Not only that, Greatist details that, it has 15 times more magnesium than broccoli, three times more iron than spinish, six times more calcium than milk, and two times more potassium than bananas. CH(Y)IA!

I’ve found chia seeds at both Whole Foods and Fresh Market. You can also find them at GNC. You can also buy them online.
